It's fall which means it's time to hunker down and eat some of those newly harvested vegetables from the garden...or Safeway. The other day at work I went to the kitchen and one of the gals that works here was nice enough to bring about 10 squashes from her garden to share with the rest of us! We all took one of course. I was surprised how many people don't know what to actually DO to a squash. How to cook it and make it delicious. Look at the squash in the picture. Doesn't it look yummy? Nice squishy squashy squash with butter and brown sugar, cinnamon and nutmeg? YUM! it's easy to prepare too. Cut in half, scoop out seeds, face up on a pan and bake at 400 for 30 minutes. 15 minutes before it's done smother it in the butter, brown sugar and spices mix. Make sure you put a lot in the scooped out part. Throw in some pecans or walnuts if you want. AMAZING. HAPPY FALL Y'ALL!
