The bison had been brought down by a lion or something, and then its carcass was covered in snow in a blizzard, and became encased in ice.
The scientist found it decades ago, and in 1984, while preparing (HA!) the bison for display, they decided to cut a chunk of the well-preserved meat from the neck and make a stew out of it.
